butter!

we have a tub of double cream in the fridge. i bought it last week for our scones and we only had 1/5 of the tub. it's been sitting there for a week and i can't think of a way to use it.

i was about to throw it out on the weekend because there isn't any other way i'd use it and it doesn't freeze well. as i checked its expiry date, i had a lightbulb moment. i realised i could make butter with it! 

after ten minutes of googling, i learnt that butter making is not that hard with modern technology. 

i followed these steps //
_ pour double cream into electric mixer and start mixing, gradually increasing the speed from low to high
_ once the mixture becomes grainy, add some ice cold water to the mixture
_ continue to beat on high until the butter separates from the buttermilk and come together
_ place butter into a muslin cloth and squeeze out any excess moisture under cold running water
_ remove butter from the muslin cloth, add a pinch of salt and mix well
 
voila! we have butter and buttermilk
i never knew 'fresh' butter tasted this good. can't wait to have them on some toast with
my homemade marmalade.
